食品科技的導入如何具體改變人們飲食生活

  1. 食品製造現場:『食品科技』(FoodTech)的導入,可讓食物機器人這項先端技術運用在飲食相關各種領域上。例如:可運用機器人手臂做飯調理、上菜與洗碗等行為。除此,食物機器人也有應用在外食產業,例如:目前已有從處理點餐到提供商品等一條龍作業服務的咖啡廳。另外在食品工廠與中央廚房等運用機器人進行大規模生產食品已不為罕見。在餐飲店方面目前仍受限一些外在因素尚未能超越人為操作效率。反之,在預防作業錯誤發生和衛生面等食物機器人的需求面有提高趨勢,若能加以改良,食物機器人未來運用在餐飲店情況將有成長可能性。
  2. 替代肉製造:『食品科技』(FoodTech)的導入,目前針對食品本身可列舉則為替代肉的製造。利用水、小麥和天然油脂所研發出的植物性肉類,無須透過食用豬牛肉一樣能維持營養均衡。尤其是由100%大豆製造,低碳水化合物與低熱量、高蛋白質又美味之優勢,知名度逐漸在消費者心中水漲船高,目前已在歐美超市除雞豬牛等肉品外,列為第四種肉品。
  3. 有效作物生產與管理:在作物生產端,目前利用AI技術有效生產作物。例如:溫室的溫濕度確認、異常檢定等雲端監控與遼闊的農地管理;利用無人機灑水與農藥噴灑,以及有限日照時間和勞動力等管理作業;自動農機運轉,減輕勞工作業負擔,有效達到生產效益等。藉由『食品科技』(FoodTech)的導入補足勞動力不足問題,同時可在不穩定氣候條件中達穩定生產。
  4. 因應環境變化的強勢栽培:另一項能不受限於氣候與天氣影響的『食品科技』(FoodTech)案例代表則為植物工廠。利用太陽光LED和培養土等環境技術,讓原本作物在難以生長的寒冷與沙漠地帶,有經營農業的可能性出現。
  5. 因應消費者需求的採購方式:因應當前疫情趨勢,食品科技運用在流通方面也備受關注。例如:利用ICT技術直接鏈結生產者與餐飲店,能達到即時下單即時發送的可能性,不僅能從生產者端確認所需購買的食材量,同時也能確認配送情況,無須像過去需要食材時需到市場採購。在個人採買方面也能輕易購買到優質食材。
  6. 新食材開發:除了上述替代肉的開發外,例如:綠蟲藻粉末狀的餅乾和飲料;維他命或營養的軟糖;100蔬菜原料的生春捲或天婦羅等新食材的開發也相當受到期待。。
  7. 外送餐點的普及化:受到疫情影響,全球外送需求平台飛耀式成長,食品科技的運用在此發揮商品訂單和配送的便利性,同時也能減少餐飲業的食物損失。
